Curious to learn more about how we design our menu at Jason’s Deli?
Behind every fresh Wild Salmon-Wich and Zucchini Grillini is a whole lot of brainstorming, sandwich-making, and taste-testing — and we recently spoke with Director of Product Development Lisa Tillman to get the inside scoop. Even after nearly 34 years in Research & Development at Jason’s Deli, Lisa says her job never fails to surprise. “You’re always doing something new, and working with the food is amazing,” she explains. “A lot of the time, it feels like you’re with family in the kitchen — it’s the hub, the center of everything that’s going on.”

Strawberry Fields Forever!
It’s not just a Beatles song — in sunny California, huge fields of strawberries really do stretch as far as the eye can see. Welcome to Driscoll’s, home of the fresh strawberries that we’ve served in our fruit salads at Jason’s Deli for thirty years.
Five members of the Jason’s Deli team recently traveled to Monterey to attend the annual PMA Foodservice Convention and Exposition. The Produce Marketing Association (PMA) has been around since 1949, and its 2200 members represent every sector of the produce industry, from seeds to supermarkets and food service outlets.
“It’s a great learning opportunity and a way for us to meet and interact with our growers and distributors,” says Blake Parker, Chief Innovation Officer. This year the group toured Driscoll’s strawberry breeding facility as well as Earthbound Farms, which is where we get our organic spinach.

Jason’s Deli Reaches Out to Aurora, Colorado
We were both shocked and saddened by the senseless tragedy in Aurora, CO on July 20th, and we continue to extend our deepest condolences. Our hearts and thoughts are with the victims and their families.

Our Aurora deli will be collecting food and monetary donations until August 31 to support GivingFirst.org, an Arvada-based resource for Colorado charities. Additionally, the deli will be donating a portion of its sales between 4-8 p.m. on Mondays. These funds will be sent to various organizations supporting the families of the victims.

Jason’s Deli Will Not Carry Sprouts Until FDA Strengthens Food Safety Regulations
Jason’s Deli Pulled Sprouts Nationally in January 2012 to Protect Customers
Jason’s deli announced this morning that it has no plans to allow raw sprouts back onto its menu until the U.S. Food and Drug Administration (FDA) develops stronger safety guidelines and/or the Centers for Disease Control and Prevention (CDC) recommends raw sprouts for pregnant women, seniors, young adults and others with compromised immune systems.
“Nobody can argue with the need for food safety regulations,” stated the Jason’s deli founder and CEO, Joe Tortorice, Jr.
On January 24, 2012, in an interview with the industry publication, The Packer, a Jason’s deli spokesperson stated that the company has “lost confidence in sprouts due to food safety concerns.” The deli concept, which has 233 locations in 28 states, pulled sprouts from its locations by January 30th, 2012.

Thirty-five years later..
Nobody knew that thirty-five years ago today a small deli at the Gateway shopping center in Beaumont, Texas would grow into an agent of change for the way millions of Americans eat.
It’s been a long journey, many things have changed (Go Organics! No more HFCS!), and we’re just as proud of the spark that ignited it all as we are of our newest deli in Newport News, VA.
We’ve been extremely fortunate to grow up with a truly dedicated family. We’re not all blood related, but we’re united under something bigger than each of us. The vision that launched Joe Tortorice Jr. into the people business, thirty-five years ago guides us still today.
We truly appreciate every one of our guests and each and every member of the Jason’s Deli family. Thank you all for everything you’ve done.

Our Founder and CEO Joe Tortorice Jr. has been honored as the first recipient of the Archbishop Joseph Fiorenza Faithful Citizen Award, hosted by the University of St. Thomas in Houston.
The award honors “leaders of faith and culture who are a light in the midst of our way of life,” presented in conjunction with the award dinner and lecture event for St. Thomas’ Center for Faith & Culture.
Joe is a parishioner of St. Anthony Cathedral Basilica in Beaumont, Texas. Earlier this year, he received Beaumont’s Citizen of the Year award and a Silver Plate Award from the International Foodservice Manufacturers Association.
John Allen Jr., senior Vatican analyst for CNN, was guest lecturer. Craig Biggio, retired star player for the Houston Astros, also attended.

Food Safety: Our Cantaloupe is Safe
Food safety is a major focus at Jason’s deli, and due to the recent news regarding cantaloupe from Jensen Farms of Colorado, we want to make sure our guests know that the cantaloupe served at every Jason’s deli is and has been safe to eat.
We have received confirmation from all of our suppliers and distributors; they have delivered no product from Jensen Farms of Colorado to any Jason’s deli. In fact, the majority of our cantaloupe is grown in California.
We are extremely selective about the people that provide our food and go to great lengths to make sure our food is safe. The family that owns Jason’s deli constantly says:
“If we won’t eat it or won’t feed it to our children then we will absolutely not serve it to our guests.”

IT’S HERE: A Gluten-free Menu
By all counts, thousands of people want a good, gluten-free sandwich. They can have it with our new ‘deli’cious & Gluten-free menu. In March we blogged about people’s interest in gluten-free sandwiches. The responses and comments were overwhelming and clear.
89% of over 4,600 responders said they have a family member with a gluten allergy or intolerance. And, 83% said they would definitely like to see us offer gluten-free breads.
We were already testing different gluten-free breads so our team decided on their great-tasting favorite. Next they compiled a menu for people with minor gluten sensitivities or who prefer to avoid gluten.

Once again we are investigating something commonly found in a lot of restaurants and want to get your feedback before moving forward. So if you can, please take a minute and answer this one important question.
The FDA divides 40 approved food colors into two categories: nine synthetic dyes that are subject to FDA certification and 31 colorings that are not (the latter are derived from minerals, plants, or insects). Do you think the nine synthetic dyes should be banned from ALL food products, from food products primarily aimed at children due to the studies showing a correlation with ADHD, other behavior problems, etc or do you think the FDA should do nothing?

We just returned from our annual trip to California to visit our produce growers and look for new and exciting items at a produce show. It was truly an amazing experience to stand in those fields of lush green and see what all goes into bringing that one head of lettuce or one strawberry to market.
A lot of time is spent in greenhouses searching for the right combination of plants to produce the highest quality possible thru natural cross breeding. It can take up to 5 YEARS from the first development of a seed variety to roll out for planting outside of test fields. Recycling Works
Restaurants are big users…water, paper, electricity, gasoline, etc. We have a long way to go but we are making strides on the journey to be better stewards of the earth we all share.
We use more recycled paper products now than in previous years. Overall our continuous effort to use recycled paper has saved the equivalent of 21,223 trees and it doesn’t stop there either. In 2008, Jason’s deli saved over 9 million gallons of water, nearly 5.5 million kilowatts of energy, nearly 800,000 pounds of air pollution and over 600,000 gallons of oil.
Just by switching many of the paper products we use to recycled paper.
To rephrase Astronaut Neil Armstrong, “That’s one small step for earth, one giant leap for our delis.”
Jason’s and the battle against childhood obesity
The Centers for Disease Control is telling us that nearly one out of three children in the U.S. ages 2 to 19 is overweight or at risk of becoming overweight. Unless we change this, we’re going to raise generations of really unhealthy kids. Kids and parents need to know more about the food they eat and how to eat healthier. As restaurant owners, we have a responsibility to do the right thing and help fight childhood obesity. We lowered the sodium, saturated fat and calories in our kid’s menu. We serve fresh, more natural, less fooled-around-with food.
And we have an announcement! We are going to invite restaurateurs, academics and public health officials to a national summit on childhood obesity next year. We’re scheduled to visit several cities in the next few weeks to talk it up. Stay tuned.
No Kidding
Feeding kids is fun in our delis, but we’re serious about trying to feed them better. We know from experiences with our own kids that they have to really like how food tastes — otherwise, forget it! And, kids like to pick. Our new kids’ menu has more tasty stuff and more choices like organic milk, little dippers and a new chicken wrap. We also did some good things that kids can’t taste, like cutting the menu’s sodium levels by 21%, saturated fat 20%, cholesterol by 17%, reduced total carbs 15% and calories by 10%. It’s all free of nitrites, too, with no nasty artificial trans fats, no processed MSG and no high fructose corn syrup (except in some of the fountain drinks).

Working to lower sodium at Jason’s Deli
We have been on a mission since the early 1980’s to make our menu healthier and in the last few quarters, we started our attack on sodium. As of Spring 2009, we lowered the sodium in several (10) of our menu items by an average of 28% and with the introduction of our new Kid’s Menu in April we lowered the sodium there by 21%.
We are definitely not where we want to be with sodium and we are committed to improving what we offer as well as continuously searching for lower sodium options.
At Jason’s we believe in balance, moderation and choices. With no artificial trans fats, no MSG and no HFCS in our food, we are providing our guests with options to make healthier choices for themselves and their families.

The Next Battle Front: Sodium
You probably heard the news stories alerting all of us that reducing sodium is the next big challenge in the food world. We, too, are concerned and have made a commitment to offering more healthy choices. Considering the size of our menu, this is occurring in phases.
Last year in Phase I, we introduced Real Choices on the menu, sandwiches with smaller portion sizes and lower sodium. By the way, they are loaded with organics! We also offer 14 different fresh lettuces, veggies and fruit on our Famous Salad Bar – with lots of organics and virtually no sodium – top these with organic balsamic vinegar and extra virgin olive oil and you are set! Healthy Kids’ Menu Just Released
Kids today are more sophisticated than ever. They want more control over what they eat and want to feel more grown up.
Parents today are weary of the same old fast food meals and want their kids to eat and enjoy better, healthier choices.
After extensive customer research, we introduced our new “Jason’s Just-Right Kid’s Menu” on April 6. Kids 12 and under get to pick and choose sides and have multiple healthy options such as organic carrots, organic apples, and fresh fruit. Organic low fat regular and chocolate milk joined the drink choices which already included organic apple juice.

Peanut Butter Recall? Jason’s Deli Not Affected.
By now, all of you have heard about the peanut butter recall. The list of recalled foods continues to rise.
Our organic peanut butter for our PB&J sandwiches, and our peanut butter cookies are not on the list.
Jason’s suppliers assure us that our peanut butter is safe and not from the facility at the center of the illness outbreak.
Although not immune to contamination, USDA certified organics have several add-on benefits. They have to meet federal standards for organic food. They have no pesticides, antibiotics or hormones. Because organic food is less processed, it’s naturally less exposed to contamination that can occur in processing.

November 15th is Texas Recycles Day. Time to remember to reuse it. We have eliminated ALL polystyrene packaging in the deli and replaced it with paper or recyclable plastic.
We are almost rid of all of our aerosols too. One more product to go. We’ll get there.
Removing High Fructose Corn Syrup
Dear friends,
We have spent the week speaking with the press, which is honestly very new to us. Without a doubt, we would rather be in our test kitchen working with the team on lowering the sodium counts of our food and dabbling with some other wonderful new menu items, but for now everyone wants to talk about our big announcement – removing high fructose corn syrup (HFCS) from the food.
Reporters keep asking this week, why did we do this? The primary reason was taste. We have done tons of tests and each time HFCS lost to cane sugar, honey and etc. We also read all the studies about the debate going on between scientists. Everyone craves the tastiest, most deli-cious food that they can get; and, of course, a lot of people want healthy food, too. We can tell you that the purest food almost always tastes the best. Trust us, we have an R&D kitchen and we taste different versions of the same dish all the time. These are some of the reasons that got us to ban artificial trans-fats and MSG.

We received an unusual customer email this week. The guest writing in compared Jason’s New Yogurt & Organic Granola Parfait to McDonald’s Yogurt Parfait. Our Guest Relationship Manager – Lisa Hooper – wrote up the story below, which we must say, is well done:
Recently, we had a customer question the difference between our fruit and yogurt parfait to the one served at McDonald’s. The guest was responding to an e-mail that we sent out about our new parfait. This was such a great question that I felt all of our customers should know the answer.

Care to Conserve
Thanks to those of you that have sent requests asking what we do to eliminate waste and conserve water and energy. We are constantly asking ourselves what we can do to lower our energy consumption and educate our people about conservation and sustainable practices. Incorporating even the smallest sustainable measures helps the world we share. It’s a journey and this is where we are, so far:
• To-go cups and packaging are foam-free
• Support organic farming and products, with new organic products being tested and added annually
• As a sponsor of American Forests’ Global ReLeaf program, we are helping to plant thousands of trees in the South Texas Wildlife Refuge.
• Currently one item away from delis becoming aerosol-free.
• In progress: Developing multiple locations powered in part by solar energy systems.

In Defense of Fat
We need to rethink our whole ideology around fat.
Now, before you shut us down, hear us out. We’re not into all fats. We definitely need to limit our intake of saturated fat. Mono-unsaturated and some poly-unsaturated fats are needed and, in moderation, beneficial.
A recent study published in the Journal of the American Medical Association called the Women’s Health Initiative Dietary Modification Trial found no correlation between a low-fat diet and the reduction in coronary heart disease, breast, or colorectal cancer.

Did you hear that? No correlation. Fat is not the problem folks. We’re finally starting to understand the French paradox. The French consume a lot of fat, yet are not suffering nearly the level of heart disease we have in this country.
